For mine the most important winery in Victoria, if not the country. Why? An wonderfully historical winery (in immaculate condition) with an incredibly long track record of high quality Shiraz, Cabernet Sauvignon and Marsanne. Indeed Tahbilk was soley responsible for putting Marsanne on the Australian winedrinker's map and it also happens to be the custodian of the oldest Marsanne vines on earth.

The estate also possesses Victoria's most historical shiraz plantings (the 1860's block). Whilst Shiraz and Marsanne get most of the attention I think the Cabernet-based wines lead the way. Recent tastings of the 1972, 1984 and 1991 confirm the well-deserved track record of cellaring capability.

Newer releases such as the 'Old Block' series have also been very impressive.

"Crushed and destemmed. Fermented with cultured yeast, matured 18 months in French oak (30–40% new). Your classic Central Victorian shiraz in a nutshell, with a down-to-earth (literally) appeal of baked earth, Aussie bush scents mingling with ripe blackberries and woody oak spice. The palate is full and generous, with a lingering, smoky savouriness. Traditional, yes, in keeping with its namesake, who knew a thing or two and established the Tahbilk red wine style. Tasted months before release and still coming together, but with an assured confidence. Bronze medal at Perth Royal Wine Show '20." 95pts | Jeni Port | Halliday Wine Companion
